1ST marinated
- 2/4 cup curd
- 750 grams of chicken
- 2tsp lemon juice
- 2tbsp ginger garlic past
- 1 tsp green chili paste
- 1 tsp Kashmiri red chili powder
- Add salt to taste
2ND marinated
- 2-3 tbsp mustard oil
- 1 tbsp Kashmiri red chili powder
- 2 tbsp ginger, garlic & green paste
- 2-3 tbsp red chili paste
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp black salt
- 1/2 tsp chaat masala
- 1/2 tsp garam masala
- 1/4th tsp roasted kasuri methI
- 1/4 tsp cardamom powder
- salt to taste

Make hung curd
To make hung curd for marinade to kya sieve place a muslin cloth over the sieve, and add 2/4 cup curd in after adding the curd, gather the muslin cloth & gently squeeze it lightly. Remove as much water from it as you can, initially. Let the curd hang curd for about 1/2 – 1 hour and the hung curd is ready for marination.
1ST Marination,
I’ve taken about 750 grams of chicken. I’ve taken leg & thigh pieces here. Now we have to score this chicken. cuts on joints & tendons will help your chicken to cook faster for the first marination,
Add salt to taste on the chicken. 2tsp lemon juice 2tbsp ginger garlic & green chili paste, 1 tsp Kashmiri red chili powder. mix all these things nicely with the chicken. One you applied the 1st marinade for 1/2 to an hour.
2nd marination
For the 2nd marination, take 2-3 tbsp mustard oil in a pan. now, let this oil smoke on high heat to remove its pungency. Then turn off the flame, and let the oil cool down slightly.
Then add 1 tbsp Kashmiri red chili powder to it, stir quickly & then take this oil into a bowl. Now add 1 tbsp ginger, garlic & green paste to this. add Kashmiri red chili paste 2-3 tbsp of this here.1 tsp coriander powder, 1 tsp cumin powder,1/2 tsp black salt. 1/2 tsp chaat masala, 1/2 tsp garam masala, 1/4th tsp roasted kasuri methi, 1/4 tsp cardamom powder, salt to taste, & add the hung curd we prepared earlier, marinate nicely.
Smoky flavor
Now we have to give the tandoor-like smoky flavor to this. Take burning embers like this, and put some ghee on it & then once it starts smoking. Cover it with a lid. Cover it & let it sit for 3-4 minutes.
The smokiness of the coal will transfer to the marinade & that will help replicate the tandoor flavor at home. After 3-4 minutes remove the coal too. At this stage taste the marinade for seasoning & spices.
Baking
Take a baking tray & place the Chicken on it like this.
Now place it in an oven preheated to 175 degrees Celsius & cook this chicken for about 25 minutes. Once, when about 5 minutes of your cooking time is left, be it an oven. You have to do basting, which means applying melted butter to the chicken.
So it’s around 20 minutes since. Once you’ve brushed the melted butter then place it again in the oven & after placing it the oven. you have to cook it for 5 more minutes. About 5 minutes are done. Our chicken from the oven is ready.
