Paratha is unleavened layered flatbreads made with whole wheat flour (atta), salt, water & ghee or oil. These traditional flatbreads are a staple in the Indian subcontinent and are served for breakfast with a side of curd, chutney, pickle, curries, eggs, and meat dishes.

Ingredients Gobi mixture :
• Cauliflower 750 gm
• Green chillies 1-2 nos.(chopped)
• Ginger ½ inch (chopped)
• Fresh mint 2 tbsp (chopped)
• Fresh coriander 2 tbsp (chopped)
• Coriander powder 1 tbsp
• Red chilli powder 1 tbsp
• Aamchur powder 1 tbsp
• Ajwain 1 tsp
For preparing paratha:
Ingredients:
• Wheat flour 1 cup
• Salt to taste
• Water as required
• Gobi mixture as required
• Ghee as required
Methods Gobi Paratha
1. For the dough, take wheat flour, salt, and ajwain seeds in a large bowl.
2. Mix them all well and gradually add water to prepare a nice dough. Knead it for 5 minutes and let it sit for 30 minutes by covering the bowl with a lid.

3. For the filling, take grated cauliflower, chopped onions, finely chopped garlic, ginger, green chilies, and coriander leaves in a bowl. For seasoning, add salt, turmeric powder, red chili powder, cumin powder, and garam masala powder to the cauliflower mixture and mix well.

4. Take oil in a wide pan and heat it. Gently transfer the prepared cauliflower mixture to the pan and saute until the raw smell is gone.

5. Turn off the stove and keep the filling aside.
6. Divide the rested dough into small portions and make each portion into a small ball.

7. Roll each dough ball by dusting some flour on the rolling surface and place the cauliflower mixture in the center.


8. Seal the filling on all sides by pulling the dough from the edges to the middle.

9. Roll the parathas evenly and place them on a hot tawa.

10. Keep flipping the parathas and cook them on both sides by smearing some ghee on both sides.
11. Once the brown spots appear on the paratha, remove the paratha from the pan.

12. Delicious Gobi Parathas are ready to be served hot and nice with curd or any pickle by the side.
