Ingredients Gulab jamun recipe

sugar syrup

  1. 4 cup sugar
  2. 3 cup water
  3. 1 tbsp rose water
  4. 3-4 green cardamoms
  5. few strands of saffron

Gulab jamun

  • 250g  Hariyali (mawa)
  • 65 grams  Malai paneer
  • 3 -4 tables different flour
  • Baking powder

Method Gulab jamun recipe

Prepare the Sugar Syrup:

  • First, prepare the sugar syrup iam adding 4 cups of sugar. To it add 3 cups of water. Now switch on, switch on the flame & cook on high flame until the sugar dissolves. Stir occasionally for 3-4 times until the sugar dissolves.
  • Now you can see the sugar has dissolved at the stage crush 2-3 pods of green cardamoms & add it to the syrup. Along with it, iam adding a few strands of saffron & 1 tbsp of rose water.
  • Rose water is the most important ingredient, without rose water Gulab jamun would not taste like Gulab jamun.now stir it & bring the syrup to a boil Once the syrup has come to a boil just boil the syrup for 2 minutes. This is very important.

Make the Dough:

  • I am taking a large flat vessel. Now add 250 G of Hariyali (mawa)( Soft reduced milk used for Gulab jamun) Now use this part of your plum to rub the mawa against the plate. You have to clean the Mawa nicely. This process would take about 8-10 minutes usually. You can see that initially The texture was graying but now it’s soft and creamy.
  • At this stage add 65 grams of Malai paneer. Grate the paneer well and rub it against the plate surface nicely. Just like now, we creamed the mava. Now you can see that the mixture is quite sticky.
  • At this stage, you have to Introduce some binding agent to the dough. I am using refined flour in this recipe. We just have to use 3 -4 tables of different flour. Add 1 tablespoon of flour mill the dough well and rub it. Against the plate. Add one tablespoon of flour at a time until the dough does not feel very sticky.
  • Now we have to add baking powder and baking soda at this stage. These ingredients are also really important they will make our Gulab jamuns fluffy. Now you can see that the dough is not that sticky. now the dough is ready, wrap it with Aplas tic wrap &The best for about 10-15 minutes.

Shape the Jamuns:

Now I have divided the dough into 13 grams portions. shaping the dough keep the dough covered with a moist cloth to keep it from drying. Shape all the Gulab jamuns

Fry the Jamuns:

  • Check the temperature of the syrup it should be around 50-60c.
  • The oil should be moderately hot at around 140-150’c. The temperature of the oil is perfect now I am using a spoon to stir the Oil in a circle mutation while adding the Gulab jamun one by one by stirring the oil the Gulab jamuns would rotate in the oil.
  • Now you can see the gulab jamun has got a nice and perfect color.

Soak in Sugar Syrup:

  • At this stage, I am removing the gulab jamun From the oil immediately go to the Dip into the sugar syrup, and soak them for at least 3 and 4 hours
  • .
  • They will soak up the syrup nicely they will double up in size and your gulab jamun Will turn soft perfect and delicious.

Serve:

  1. Serve the Gulab Jamun warm or at room temperature. Enjoy!
