 This crunchy tomato and carrot salad is a vibrant mix of fresh tomatoes and grated carrots, tossed with zesty olive oil and lemon dressing. It’s a refreshing side dish that’s bursting with color and flavor, perfect for any meal or gathering.

Ingredients

  • 2 large tomatoes
  • 2 medium carrots
  • 1/4 cup chopped fresh parsley (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method

  1. Wash and peel the carrots. Grate them into a bowl.
  2. Wash the tomatoes and dice them into small pieces. Add them to the bowl with the grated carrots.
  3. If using parsley, wash it and chop it finely. Add it to the bowl.
  4. In a small bowl, mix together olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss everything together until well combined.
  6. Taste and adjust seasoning if needed.

Ingredients


  • 8 oz (225g) spaghetti
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt, to taste
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese, for serving (optional)

Method

  1. Cook spaghetti in a pot of boiling salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.
  2. While the spaghetti is cooking, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes, and sauté until the garlic is golden brown and fragrant, about 1-2 minutes. Be careful not to burn the garlic.
  3. Add the cooked spaghetti to the skillet, along with a splash of reserved pasta water. Toss everything together to coat the spaghetti evenly with the garlic-infused oil. If the pasta seems dry, add more pasta water as needed.
