I’m making a Mumbai street-style veg grill sandwich recipe. This sandwich is found on the streets of Mumbai, & I love it whenever I share any recipe in Mumbai & street food. This is one of my favorite foods. & I will already share many recipes for Mumbai street-style sandwiches earlier. & these sandwiches are very unique there are certain components which are very important & make these sandwich distinct. I’ve already shared the recipe for the veg grill sandwich, tandoori sandwich, junglee sandwich earlier, and the grill sandwich that I’m making today is the veg grill sandwich. There is a layer of potato masala in it. Also, the same vegetables go in it. & then it is grilled on a skilled & grill sandwich is very different from the Mumbai street-style masala toast sandwich.

Ingredients Veg grill Sandwich recipe Masala
- 1 tbsp cumin seeds
- 1 tbsp fennel seeds
- 1 tbsp black pepper
- 2 tsp cloves
- ½ star anise
- 1 tsp dried pomegranate seed powder
- ½ tsp asafetida
- ½ tsp dried ginger powder
- ½ tsp black salt
- 2.5 tbsp salt
Instructions Sandwich Masala
- Once the pan is hot, lower the flame completely. Now, to this add cumin seeds, fennel seeds, black pepper, and cloves, & add star anise to this.
- Now, you have to roast these spices on a low flame. Then transfer them to a bowl & cool them down. Once the spices are cooled down, then transfer them to a mixer grinder.
- Add dried pomegranate seed powder, mango powder, asafetida, ginger powder, black salt, and salt.
- Now grind all these spices together to form a fine powder. Our sandwich masala is ready.

Ingredients Chutney
- 2 cups of coriander leaves
- 10- 12 spicy green chilies
- 10-12 curry leaves
- 2-3 blanched spinach ( optional)
- 4-5 garlic cloves
- 1 tsp sandwich masala
- Salt to taste
- 3 ice-cubes
Instructions Chutney
- In a mixer grinder jar, take a bunch of coriander leaves, spicy green chilies, curry leaves, and blanched spinach leaves.
- These are optional, they give a good color, garlic cloves, roasted chana dal, and sandwich masala salt to taste, now add some ice cubes.
- They help retain color as well. & now I’m adding 1 slice of bread. This is a trick to retain water in this chutney.
- Now you have to blend everything to make it into a fine Chutney.
Ingredients Potato masala
- 4 tbsp oil
- mustard seeds
- some cumin seeds
- curry leave 10-12
- 2-3 green chilies
- 1 tabs ginger garlic past
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chili powder
- 1 tsp coriander powder
- a pinch of garam masala
- 1/4 cup green peas
- 6 boiled potatoes
- half lemon juice
Potato masala
- Heat a pan nicely and then add oil to it. Add the same mustard seeds. Some cumin seeds, curry leaves, chopped green chilies, & add ginger garlic paste, & lightly mix it. Then lower the flame to it. Add turmeric powder, Kashmiri red chili powder, and coriander powder, & add a pinch of gram masala & stir it gently.
- Add green peas, I’ve taken boiled potato here. Crush them with your hands & add them & add salt to taste. Now, stir everything nicely. Once stirred, take a potato masher & stir the potatoes nicely. & combine everything well.
- Lastly, add half a lemon juice. & add lots of freshly chopped coriander leaves. Mix it well. The potato masala is ready.
Ingredients Assemble the Sandwich
- 3 sandwich bread
- soft butter
- sandwich chutny
- potato masala
- sandwich masala
- chopped onions
- sliced tomato
- chopped capsicum
Assemble the Sandwich
- Take a sandwich bread slice & apply soft butter on it—end to end. Now apply sandwich chutney to it. The chutney is usually spicy. So add it sparingly.
- Now place this sandwich bread & apply a nice layer of the potato masala we prepared.
- Now add a layer of finely chopped onions on it. & sprinkle some sandwich masala on it.
- Take another slice of bread & apple butter & chutney it & then place the bread on the sandwich with chutney & butter side down.
- Now again apply some butter & chutney, & now add sliced tomatoes to it. Now again season the tomato generously with the sandwich masala. Then on top, add a layer of chopped capsicum.
- Take another slice of bread & apply some butter on it. & apply some chutney & place the bread slice on the sandwich.
- You can see that the assembly of our sandwich is ready.
Grill the Sandwich
- Heat a grill pan or a sandwich maker.
- Place the sandwich on it and grill until both sides are golden brown and crisp.
- If using a regular pan, press down with a spatula and cook on medium heat until crisp, flipping once.
