Thandai Masala and Drink Ingredients:
- Almonds – 1/4 cup
- Cashews – 1/4 cup
- Pistachios – 1/4 cup
- char magaz – 1/4 cup
- Poppy Seeds-5 tablespoons
- Fennel seeds – 2 tablespoons
- Black peppercorns – 1 tablespoon
- Green cardamom pods – 1 tablespoon
- Saffron strands – a pinch
- Rose petals (dried) – 1 tablespoon
- Nutmeg powder – 1/4 teaspoon
- Sugar – 1 cup (adjust to taste)
Thandai Drink Ingredients:
- Milk – 1 liter
- Thandai Masala – 3-4 tablespoons (or to taste)
- Sugar – 1/4 cup (adjust to taste)
- Saffron strands – a few (for garnish)
- Rose petals – a few (for garnish)
- Chopped nuts – for garnish (optional)
Instructions:
For Thandai Masala:
- Dry Roasting:
- We must start by heating a pan for 2 to 3 minutes. now I’ll switch off the stove. I’ll add almonds cashews and pasta. The heat from the pan will dry out the nuts a bit. Let them cool.
- Dry roast, four seeds fennel seeds, and black peppercorns together until fragrant.
- Blending:
- In a blender or food processor, add roasted nuts, seeds, spices, green cardamom pods, saffron strands, dried rose petals, nutmeg powder, and sugar.
- Blend to a fine powder. Ensure it’s well-mixed and smooth.

- Storing:
- Store the Thandai Masala in an airtight container. It can be kept for up to a month in a cool, dry place.
For Thandai Drink:
- Mixing:
- In a large bowl, add 3-4 tablespoons of Thandai Masala to the milk.
- Mix well and let it sit for at least 2 hours or overnight in the refrigerator for the flavors to infuse.
- Straining:
- Strain the milk through a fine mesh sieve or muslin cloth to remove coarse particles.
- Serving:
- Pour the Thandai into glasses.
- Garnish with saffron strands, rose petals, and chopped nuts.
- Chilling:
- Serve chilled for the best flavor.
