Thandai Masala and Drink Ingredients:

  1. Almonds – 1/4 cup
  2. Cashews – 1/4 cup
  3. Pistachios – 1/4 cup
  4. char magaz  – 1/4 cup
  5. Poppy Seeds-5 tablespoons
  6. Fennel seeds – 2 tablespoons
  7. Black peppercorns – 1 tablespoon
  8. Green cardamom pods – 1 tablespoon
  9. Saffron strands – a pinch
  10. Rose petals (dried) – 1 tablespoon
  11. Nutmeg powder – 1/4 teaspoon
  12. Sugar – 1 cup (adjust to taste)

Thandai Drink Ingredients:

  1. Milk – 1 liter
  2. Thandai Masala – 3-4 tablespoons (or to taste)
  3. Sugar – 1/4 cup (adjust to taste)
  4. Saffron strands – a few (for garnish)
  5. Rose petals – a few (for garnish)
  6. Chopped nuts – for garnish (optional)

Instructions:

For Thandai Masala:

  1. Dry Roasting:
    1. We must start by heating a pan for 2 to 3 minutes. now I’ll switch off the stove. I’ll add almonds cashews and pasta. The heat from the pan will dry out the nuts a bit. Let them cool.
    • Dry roast, four seeds fennel seeds, and black peppercorns together until fragrant.
  1. Blending:
    1. In a blender or food processor, add roasted nuts, seeds, spices, green cardamom pods, saffron strands, dried rose petals, nutmeg powder, and sugar.

  1. Storing:
    1. Store the Thandai Masala in an airtight container. It can be kept for up to a month in a cool, dry place.

For Thandai Drink:

  1. Mixing:
    • In a large bowl, add 3-4 tablespoons of Thandai Masala to the milk.
    • Mix well and let it sit for at least 2 hours or overnight in the refrigerator for the flavors to infuse.
  2. Straining:
    • Strain the milk through a fine mesh sieve or muslin cloth to remove coarse particles.
  3. Serving:
    • Pour the Thandai into glasses.
    • Garnish with saffron strands, rose petals, and chopped nuts.

  1. Chilling:
    • Serve chilled for the best flavor.
