Ingredients

  • 4 cups full-fat milk
  • Quarter cup sugar
  • 1/2 cup heavy cream 
  • 1/2 cup Milk powder
  • 1/4 cup condensed milk
  • 1/4 cup crushed nuts (like almonds and pistachios)
  • 1/4 teaspoon cardamom powder
  • A few saffron strands (optional)

Method Kulfi Recipe

Boil the Milk

Pour the milk into a heavy-bottomed pan. you have to add 2 liters of full fat milk, now you have to bring the milk to a gentle boil.

Reduce the Milk

 Once it boils, reduce the heat and simmer the milk, stirring frequently, until it reduces to half its original quantity. This takes about 30-40 minutes.

Add Ingredients:

Add the sugar, condensed milk, crushed nuts, heavy cream Milk powder, ,cardamom powder, and saffron strands to the reduced milk. Now you have to reduce the milk by stirring in between. we use it on medium flam. we will give it to make rabri. Mix well and simmer for another 5 minutes.

Cool the Mixture:

Turn off the heat and let the mixture cool to room temperature.

Freeze the Kulfi

Pour the mixture into kulfi molds or small cups. Insert a stick in the center if you like. Freeze for at least 6-8 hours, or until the kulfi is solid.

Serve:

To serve, dip the molds in warm water for a few seconds to loosen the kulfi, then pull it out. Enjoy your homemade kulfi!
