Bread Upma Recipe | Breakfast, Snack or Lunch is a quick and tasty South Indian breakfast. It uses bread, spices, and vegetables. This dish is a twist on traditional Upma, using bread cubes instead of semolina (suji). Start by sautéing onions, tomatoes, and green chilies in oil or ghee. Spices like mustard seeds, turmeric, and curry leaves add flavor and aroma. Next, add chopped or torn bread pieces and mix well to soak up the flavors. Variations may include peanuts, cashews, or grated coconut for extra crunch. You can use white, brown, or multigrain bread based on your preference. A squeeze of lemon juice and fresh coriander leaves adds a nice touch. It’s a great way to use leftover bread, and it takes 15 minutes to make. Serve Bread Upma at a high temperature, and it pairs nicely with tea or coffee for a light meal.

I should have shared this recipe sooner. It’s one of our favorite snacks made with bread. I have many fond memories tied to bread upma.

This was one of the first recipes I learned. In school and college, I often made it for my sister and me.

I’ve been making this dish for years. It’s a beloved breakfast or snack at my home. It’s quick to prepare when you’re short on time.

I recommend using homemade bread, but any kind works—whole wheat bread, multigrain, brown bread, or white bread. Just make sure the bread is soft. This helps it soak up the spices and herbs, making it flavorful.

You can use fresh slices or bread that is a few days old. If using fresh bread, you don’t need to cut the edges. For older bread, trim off any hard parts.

Sometimes, I make this with pav (dinner rolls). If you have leftover pav, this recipe works great.

Another quick recipe to try is bread masala. These recipes are perfect for using leftover bread for a quick snack.

How Two Make Bread Upma

Ingredients

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tbsp Gota Urad 1 tbsp Chana Dal
  • 1 sprig of Curry Leaves
  • 1 inch Ginger – chopped
  • 2-3 fresh Green or Red Chillies – chopped
  • 2 medium Onions – chopped
  • 2 medium Tomatoes – chopped
  • ½ tsp Turmeric Powder
  • ½ tsp Degi Red Chili Powder
  • 2½ tbsp Curd
  •  ¾ cup Water
  • Salt to taste
  • 9-10 toasted Bread Slices – diced
  • Fresh coriander leaves – roughly torn

For Fried Nuts

  • 1 heaped tbsp Ghee
  •  10-12 Cashew Nuts
  • 2 heaped tbsp Peanuts

for Garnish

  • Fried Cashew Nuts & Peanuts
  •  Fresh Coriander Leaves

Process

In a kadai heat oil and add mustard seeds, gota urad, and chana dal and let them crackle.

 Add curry leaves, ginger, green or red chilies, and onion, and saute until translucent.

Then add tomatoes and cook until they are soft.

Add the turmeric powder, degi red chili powder, and curd and saute on medium heat for a minute. Now add waterand salt and bring it to a boil. Then add the roasted bread slices, cover with a lid, and let it cook for half a minute, tossing it properly until everything is coated completely.

 Finish it with fresh coriander leaves and mix everything one last time. Serve hot on a serving plate and garnish with fried cashew nuts and peanuts and fresh coriander leaves.

 For Fried Nuts In a small pan heat ghee then add cashew nuts and peanuts and fry them until light golden. Then remove and keep aside for further use.

Helpful Tips

· Bread: Use any soft bread for this tasty recipe. Indian ‘pav’ or dinner rolls work well too. Fresh or a few days-old breads are fine. Try whole wheat, multigrain, or ragi bread (finger millet bread) for a healthier option.

· Spicing: Adjust the spices to suit your taste. For kids, skip the green chilies and red chili powder. You can replace red chili powder with cayenne pepper or paprika.

· Scaling: You can easily halve, double, or triple this recipe.

· Nuts: Add roasted cashews or peanuts for garnish or mix them with the bread upma. This gives a nice crunch and makes the dish healthier and more filling.
