Ingredients Aloo Methi Recipe
- 3 medium size potatoes
- 2 onions
- 2 tomatoes
- 1 bunch of methi
- 1 tablespoon ginger and garlic paste
- 2 dried chilies
- 1 tsp cumin seed
- 1/3 cup mustard oil
- 1/2 tsp tarmeric
- 1 tsp red chili pow
- 3 green chilies
- Add to taste salt
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 2 tsp green coriander
- 2 spoon desi ghee

How to Prepare Vegetables
- Wash the methi 2 to 3 times, remove the extra-long stem only first wash then cut the methi.
- 3 medium-sized potato peels cut the potato into dice shapes and keep the chopped potato in water.

Prepare masala
- Take kadhai on medium flame add mustard oil cumin seed 1 tsp chopped onion and saute on medium flame until the onion becomes golden.
Add Spices and Aromatics:
- Add Chopped garlic and ginger mix it well and add 2 dry chilies add chopped potatoes to the kadhai remove excess water first and mix well add turmeric, and red chili powder, now the potatoes have started to be roasted lightly.
- At this stage, I’m adding two to three tomatoes. Add salt now we will let everything cook alone with the potatoes. So iam putting it on a low-medium flame for about 3 to 4 min. You can see that the tomatoes have been cooked perfectly. At this stage, I’m adding 1 teaspoon of coriander powder, and ½ teaspoon of cumin powder mix it well.
Add Fenugreek Leaves:
- Now this stage i’m adding chopped methi.
- Now here comes the most special thing. You do not have to add water and don’t cover the lid stir continuously on low flame. cook it for three minutes.
Final Touch:
- add half tsp a garam masala and chopped green coriander, which is one big spoonful of desi ghee. IF the look is good then the test is good. Our methi potato is ready.
Serve:
- Serve hot with roti, paratha, or rice.
